1. 2 1/4 cups blanched almond flour

2. 1 tsp pumpkin pie spice

3. 1 tsp baking soda

4. 1/2 tsp sea salt

5. 1 cup pumpkin puree

6. 1/4 cup honey

7. 4 eggs

8. 1/2 tsp vanilla extract


1. Preheat oven to 350 degrees. Grease the bottom of a 9'' x 3'' springform pan.

2. Combine dry ingredients in a small bowl.

3. In a large bowl, using a stand mixer, combine pumpkin puree, honey, eggs and vanilla. Slowly add the dry ingredients to mixture. Continue mixing until smooth and well blended.

4. Pour batter into prepared pan. Bake for 25-28 minutes or until a toothpick inserted into the center comes out clean.

5. Allow cake to cool completely and then place in the fridge to chill.
