RECIPE: Granola

Ingredients

2 cups organic rolled oats

1/2 cup whole raw almonds

1/2 cup cashews

1/2 cup whole, raw pepitas

4 TBSP olive oil or coconut oil

4 TBSP honey

2 TBSP Flax

1/3 cup unsweetened shredded coconut [optional]

1 teaspoon cinnamon

1 teaspoon cardamom

1/2 cup dried cranberries or raisins

Instructions

Preheat the oven to 325 F. Line a baking sheet with aluminum foil and coat it with olive oil cooking spray.

Mix the oats, almonds, cashews and pepitas, cinnamon, cardamom and optional coconut in a bowl. In another bowl, whisk together the olive oil or coconut oil, honey. Combine and toss to coat. Spread out on the prepared baking sheet. Bake for about 15 minutes on the middle rack, or until golden brown and crisp.

Once the granola has cooled slightly, stir in the cranberries or raisins if using.
