RECIPE: Pumpkin Bread

Ingredients

2 cups spelt flour

1 tsp baking soda 

2 tsp cinnamon 

1 tsp nutmeg 

1 tsp sea salt

1 cup pumpkin puree 

1 cup almond milk 

2 eggs 

1/3 cup maple syrup

1 tsp vanilla extract 

Instructions

Preheat the oven to 350F. Mix the spelt, baking soda, spices and salt together in a large mixing bowl. In a separate bowl combine the eggs, pumpkin puree, vanilla and maple syrup and mix until smooth. Mix the wet ingredients into the dry and stir until well combined. Pour your batter into a lightly oiled loaf pan and bake for 60 minutes until cooked through.
