RECIPE: Pumpkin Bread
Ingredients
2 eggs
1 cup unsweetened canned pumpkin puree
1/4 cup almond milk [or other nondairy milk]
1 t vanilla
1/3 cup coconut oil [melted]
1/4 cup maple syrup
1 3/4 cup whole wheat flour
1 t cinnamon
1 t nutmeg
1 t baking soda
1 t baking powder
2 T oats- fashioned oats [optional]
Instructions
Preheat oven to 350 degrees. Line 9 x 5 loaf pan with parchment paper.
Whisk tougher eggs, pumpkin. Add milk, vanilla, coconut oil and syrup. Whisk.
Add in flour, nutmeg, baking soda baking powder and cinnamon.
Scrape batter in to loaf pan. Top with oats [optional].
Bake for approximately 45 minutes, until toothpick comes out clean.
Let the bread cook in the pan for 30 minutes before removing.
